Tofu Pancakes

A tasty and healthy take on classic pancakes are these tofu pancakes. Full of protein from the tofu and flavored with turmeric and nutritional yeast, these make a hearty breakfast or brunch.

Ingredients:

  • 200g firm tofu, drained and crumbled

  • 1/4 cup all-purpose flour

  • 1/4 cup almond milk

  • 2 tablespoons nutritional yeast

  • 1 tablespoon olive oil

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon turmeric powder

  • Salt and pepper to taste

  • Cooking spray or oil for frying

Instructions:

Crumble tofu, flour, almond milk, nutritional yeast, olive oil, baking powder, turmeric powder, salt, and pepper should all be combined in a mixing bowl


Until a smooth batter forms, thoroughly mix


Grease a non-stick skillet with cooking spray or oil and heat it over medium heat


To make pancakes, ladle a tiny bit of batter onto the skillet


Cook until cooked through and golden brown, 2 to 3 minutes per side


Continue with the leftover batter, adjusting the skillet's oil level as necessary


Top with your preferred pancake toppings and serve hot
