Instructions:Preheat your smoker to 225F 107C In a small bowl, combine brown sugar, maple syrup, smoked paprika, black pepper, and cayenne pepper Mix well to create a glaze Cut the bacon slices in half crosswise to create shorter pieces Dip each bacon piece into the glaze, ensuring it's coated evenly Wrap each glazed bacon piece around a toothpick, securing it in place Place the bacon-wrapped pig bites onto a smoker rack or grate, leaving some space between them Smoke the pig bites at 225F 107C for about 2 hours or until the bacon is crispy and caramelized, basting with the remaining glaze halfway through cooking Once done, remove from the smoker and let them cool slightly before serving Serve these delicious smoked pig bites as an appetizer or snack, and enjoy!
