There's a tasty new way to make burgers called Potato Salad Topped Burgers from The Food in My Beard. Every bite of the creamy potato salad is made better by the unique crunch it gives. It's great for a summer barbecue or any time you want a hearty burger. Ingredients:
Instructions:Preheat your grill to medium-high heat Season the burger patties with salt and pepper Grill the burgers for about 4-5 minutes per side, or until they reach your desired level of doneness During the last minute of grilling, add a slice of cheddar cheese to each patty and let it melt While the burgers are cooking, prepare the potato salad In a large bowl, mix together the mayonnaise, Dijon mustard, and red wine vinegar Add the diced potatoes, celery, red onion, and chopped parsley to the mayo mixture Stir until well combined Season with salt and pepper to taste Once the burgers are done, remove them from the grill and let them rest for a minute To assemble the burgers, place a lettuce leaf on the bottom half of each bun Place a burger patty with melted cheese on top of the lettuce Add a slice of cooked bacon and a slice of tomato to each burger Generously spoon the potato salad on top of the tomato slice Place the top half of the bun on the potato salad to complete the burger Serve the Potato Salad Topped Burgers immediately, and enjoy!
