Burnt honey gives this smooth ice cream a deep and rich flavor that makes it a great treat for any event. It has just the right amount of sweet and slightly caramelized notes. Ingredients:
Instructions:Over medium heat, stir the honey in a heavy-bottomed saucepan every so often for about 5 to 7 minutes, until it turns dark and caramelizes The heavy cream and milk should be heated in a different saucepan until they are just beginning to simmer Mix the egg yolks together in a bowl Pour the hot cream mixture into the egg yolks slowly while whisking all the time to temper the eggs Put the mixture back in the saucepan Cook over low heat, stirring all the time, for about 5 minutes, or until it gets a little thicker and coats the back of a spoon Put the mix through a fine-mesh sieve and into a clean bowl Add the vanilla extract and mix well Put the mixture in the fridge and let it chill until it's completely cold Put the chilled mixture into an ice cream maker and churn it according to the directions on the machine's box Spread the ice cream out in a container that can go in the freezer Freeze it until it's firm, which should take about 4 hours or overnight
