Fourth of July Brownie Bites

Celebrate Independence Day with these delightful Fourth of July Brownie Bites, featuring a fudgy brownie base, topped with fresh strawberries, blueberries, and a dollop of whipped cream. A perfect sweet treat for your BBQ festivities!

Ingredients:

  • 1 box brownie mix

  • 1/2 cup vegetable oil

  • 2 large eggs

  • 2 tablespoons water

  • 1 cup white chocolate chips

  • 1 cup strawberries, diced

  • 1 cup blueberries

  • Whipped cream for topping

Instructions:

Warm the oven up to 350F 175C and grease small muffin tins


Mix the brownie mix, eggs, vegetable oil, and water together in a bowl until everything is well mixed


Add the white chocolate chips and mix them in


Fill up each mini muffin tin cup about two thirds of the way to the top with brownie batter


In a toothpick, stick something in the middle and pull it out


It should come out with moist crumbs on it


Let the brownie bites cool all the way in the muffin tins


After the brownie bites have cooled, take them out of the tins and put them on a platter to serve


Diced strawberries and blueberries and put them on top of each brownie bite


Put some whipped cream on top of every brownie bite


Serve your Fourth of July brownie bites and enjoy them!

Lemon Poppy Seed Muffins

The lemon in these muffins makes them taste great, and the poppy seeds give them a nice crunch. They are great as a breakfast treat or as a snack.

Ingredients:

  • 2 cups all-purpose flour

  • 1/2 cup granulated sugar

  • 2 tablespoons poppy seeds

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, melted

  • 1 cup plain yogurt

  • 2 large eggs

  • 2 lemons, zest and juice

  • 1 teaspoon vanilla extract

Instructions:

Warm your oven up to 350 F 175C and put paper liners in a muffin tin


There are poppy seeds, sugar, baking powder, baking soda, and salt in a large bowl


They should all be mixed together with a whisk


Melt the butter and add it to another bowl


Then add the yogurt, eggs, lemon zest, lemon juice, and vanilla extract


Add the wet ingredients to the dry ones and mix them together just until they are mixed


Make sure not to mix it too much; a few lumps are fine


Fill up each muffin pan cup about two thirds of the way to the top with muffin batter


After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick inserted into the middle comes out clean


When you take the muffins out of the oven, let them cool for a few minutes in the pan before moving them to a wire rack to cool all the way through

Lisa's Goutie Dumplings

Homemade dumplings that are filled with a tasty pork and vegetable mixture and taste great. These Lisa's Goutie Dumplings are the perfect mix of crispy and soft, making them a treat that you can't say no to.

Ingredients:

  • 2 cups all-purpose flour

  • 1/2 teaspoon salt

  • 1 cup water

  • 1 pound ground pork

  • 2 cloves garlic, minced

  • 1 tablespoon ginger, minced

  • 2 green onions, finely chopped

  • 2 tablespoons soy sauce

  • 1 tablespoon sesame oil

  • 1/2 teaspoon black pepper

  • 1 egg

  • 1/4 cup water chestnuts, chopped

  • 1/4 cup shiitake mushrooms, chopped

  • 1/4 cup cabbage, finely shredded

  • 1/4 cup carrot, finely grated

  • 1/4 cup bamboo shoots, chopped

  • 1/4 cup water

  • 2 tablespoons vegetable oil for frying

Instructions:

Put the all-purpose flour and salt in a bowl and mix them together


Add 1 cup of water slowly while mixing until a dough forms


For about 5 minutes, knead the dough until it gets smooth and springy


Put a lid on top of the dough and wait 30 minutes


Add the chopped green onions, soy sauce, sesame oil, black pepper, and egg to a different bowl


Then add the minced garlic and ginger


Wet the bamboo shoots, cabbage, shiitake mushrooms, and water chestnuts, then add them to the bowl


Cut the dough into small pieces and roll out each one into a thin circle that is about 3 inches across


Put some of the pork mixture in the middle of each circle of dough


To seal the edges, fold the dough in half to make a half-moon shape


In a pan, heat vegetable oil over medium-high heat


Be careful not to touch the dumplings as you put them in the pan


It will take about two to three minutes of cooking until the bottoms are done


Cover the pan with a lid and add 1/4 cup of water


This will steam the dumplings for 5 to 7 minutes


Take off the lid and keep cooking until the bottoms are crispy and the water is gone


Serve hot with the sauce of your choice

Ingredients:

  • 1 loaf of vegan Italian bread

  • 1 cup vegan marinara sauce

  • 1 cup vegan mozzarella cheese, shredded

  • 1 cup vegan pepperoni slices

  • 1 cup sliced mushrooms

  • 1 cup sliced bell peppers

  • 1 cup sliced red onions

  • 2 tablespoons olive oil

  • 1 teaspoon dried oregano

  • 1 teaspoon garlic powder

  • Salt and pepper to taste

Instructions:

Preheat your oven to 375F 190C


Slice the Italian bread horizontally to create a top and bottom layer


Spread marinara sauce evenly on the bottom layer of the bread


Layer vegan mozzarella cheese, pepperoni slices, mushrooms, bell peppers, and red onions on top of the marinara sauce


Sprinkle with olive oil, dried oregano, garlic powder, salt, and pepper


Place the top layer of the bread over the toppings


Wrap the sandwich tightly in aluminum foil


Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly


Remove from the oven and let it cool slightly before slicing into individual servings

Ingredients:

  • 3 cups sushi rice

  • 1/4 cup rice vinegar

  • 2 tablespoons sugar

  • 1 teaspoon salt

  • 4 nori sheets

  • 1/2 cup crab meat

  • 1/2 cup cucumber, julienned

  • 1/2 cup avocado, sliced

  • 1/4 cup mayonnaise

  • 2 tablespoons Sriracha sauce

  • 1 tablespoon sesame seeds

  • 1 tablespoon soy sauce

Instructions:

Cook sushi rice according to package instructions

Tofu that has been marinated and cooked in a rich tomato-coconut sauce makes this Vegan Tikka Masala Curry taste great and be creamy. This is a great plant-based version of the traditional tikka masala. It's full of healthy ingredients and fragrant spices.

Ingredients:

  • 1 block extra-firm tofu, pressed and cubed

  • 1 cup plain vegan yogurt

  • 2 tablespoons lemon juice

  • 2 teaspoons ground cumin

  • 1 teaspoon ground coriander

  • 1/2 teaspoon cayenne pepper

  • 1 teaspoon smoked paprika

  • 1 teaspoon garam masala

  • 1 tablespoon grated ginger

  • 3 cloves garlic, minced

  • 1 tablespoon tomato paste

  • 1 can 14 oz diced tomatoes

  • 1 cup coconut milk

  • 1 tablespoon olive oil

  • 1 onion, diced

  • 1 bell pepper, diced

  • Salt and pepper to taste

  • Fresh cilantro for garnish

Instructions:

In a bowl, mix vegan yogurt, lemon juice, cumin, coriander, cayenne pepper, smoked paprika, garam masala, grated ginger, and minced garlic to make the marinade


Add cubed tofu to the marinade, coat evenly, and let it marinate for at least 30 minutes


In a large pan, heat olive oil over medium heat


Add diced onion and bell pepper, saut until softened


Add tomato paste and cook for another minute


Add marinated tofu along with any remaining marinade to the pan


Cook until tofu is lightly browned


Pour in diced tomatoes and coconut milk


Stir well and bring to a simmer


Let the curry simmer for 15-20 minutes, stirring occasionally, until it thickens slightly


Season with salt and pepper to taste


Garnish with fresh cilantro before serving


Serve hot with rice or naan bread

Put the filled crepes back in the pan and cook for two to three minutes on each side, until the filling is hot and the cheese is melted


If you want, you can top the Broccoli Cheddar Chicken Crepes with extra cheese and herbs before serving them hot
